Libby's Corned Beef, 12-Ounce Cans (Pack of 6)

Review by Catherine Schlim from Sacramento CA:

I have purchased this product for at least 40 years. I peel, cube up, and cook 2 or 3 large potatoes and add to them a tablespoon of dry minced onions (or fresh onions). Let the dry onion reconsitute in the moisture from the potatoes. Add to the potatoes and onion...the corned beef that has been pulled apart and some pepper. Heat all thoroughly (microwave). Serve with a green vegetable and top the hash with catsup. Yummmmm

I love the idea of stocking up for snowed in days. Corned beef is a great way to keep meat on hand.

As one other reviewer said: the packing was terrible. Loose cans all dented up.

AMAZON: pack it like you do all your other stuff. Put in bubble wrap!!!

Review by Eric Anderson from Tucson, AZ United States:

I'll start with the downsides. First, some cans have large chunks (a couple tablespoons) of congealed fat around the outsides of the meat. All cans have a thin layer of the fat, which is inevitable and forgivable with canned meat. If this disgusts you, I don't recommend this product. While there's some fat in the meat, the chunks are easily cut away from the outside and discarded.
The can's also not shiny and new-looking. It sort of looks like war rations: a bit dirty, dingy, and banged-up. It says it's from Brazil. These things may raise red flags for some people.
However, the meat is good. It does not have the sort of weird gelatinous consistency that Spam has; more of a shredded beef texture. For this reason I recommend refrigerating the meat before cutting it up, so that it slices better. It's a bit salty, but not too much, and has a mild flavor. I don't think I'd eat it by itself or cold, but I like it in quesadillas or cooked in with noodles. I can also see why people fry slices of it. It's a nice thing to have around as a meat ingredient which will keep for a long time.
